- 400 gm Green Brinjal cubes
- 2 Raw Bananas cubed
- 1 tsp Salt
- 1 tsp Ginger garlic paste
- 3 tbsp Oil
- 2 chopped Onions
- 1 tsp Red Chilli powder
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 small bunch chopped Coriander Leaves
- 1-2 chopped Green Chillies
Steps to make to make Eggplant and Raw Banana Curry
- In a pan, heat oil and add the ginger-garlic paste, and Green chilies. Saute for a minute and add the rest of the spices. Now add the sliced Onions. Saute until translucent. Now add Brinjal cubes to it. Saute until nicely done. Also, add half of the chopped Coriander Leaves too. Add half a cup of water too.
- Cook on a low heat for 10-12 minutes with a lid on. Now add cubed Raw Bananas. Mix well and cook for about 10-12 minutes more or as required.
- Half way through the cooking process, check for Salt once. Add rest of the chopped Coriander Leaves. Adjust Salt accordingly. Cook for a further 5-6 minutes more. It should be done on a low heat only. Never do it on a high heat. Slow cooking makes it more flavourful and mouthwatering.
- It's time to dish out now. Enjoy with simple homemade Rotis or Chapatis or even Phulkas. Or even with a steaming hot plate of simple boiled Rice. Yum!
