  15. For gravy paste
  16. 4 green chillies
  17. 1 small piece of ginger
  18. 1 tbsp Pepper corns
  19. 1 sprig Curry leaves
  20. 1 tbsp chilli powder
  21. To cook
  22. leaves Banana
  23. Aluminium foil
  24. Oil as required

  1. Mix all ingredients for marination into a fine paste.coat fish throughly and marinate for 2 hrs.
  2. Grind the ingredients for the gravy paste into a fine paste by adding required water.keep aside
  3. Heat a skillet add oil for shallow fry fish.fry on both sides till it’s brown and cooked well.remove from heat and keep aside
  4. In a pan heat oil and sauté shallots,onions and curry leaves till it turn translucent or slightly brown,add the ground paste.and sauté till raw smell is gone.add chilli powder and sauté for a minute for raw smell to go.add tomatoes and cook till tomatoes turn mushy.check seating,adjust salt and spice as required.keep this aside to cool.
  5. I have used banana leaves for typical Kerala style.but also have shown how to use aluminium foil.process is same.. In a sheet of aluminium foil spread a layer of the masala.keep the fried fish on this layer.cover fish with another layer of masala.adjust the amount of masala as per the like and dislike.
  6. Wrap the foil well. Heat a skillet,add a bit of oil,and place the wrapped foil or banana leave and heat well on both sides for 2-3 minutes.removes from heat and serve hot.goes well with rice/parata or chapati
  7. Can serve in the foil or banana leaf
